This month’s recipe for our Cook, Care & Share project is Strawberry Cream Puffs (well, it is Wimbledon month!). All the ingredients you need are listed below.
In our demo video, local chef Kate talks you through all the steps, including making your own puff pastry from scratch – though shop-bought is fine too.

Strawberry and cream puffs ingredients:
1 block of puff pastry
125ml double cream
1 bowl of fresh strawberries
1 egg
Small amount of caster sugar
Equipment:
Biscuit cutter
Pastry brush
Rolling pin
Knife
Baking tray
Fork
Mixing bowl
Whisk
If you wish to make the puff pasty yourself here are the ingredients you will need. Rest assured that using ready-made pastry is fine!
Puff pastry from scratch ingredients
When making puff pastry, the proportions are 3/4 fat to flour.
200g Plain flour
150g Fat (75g lard, 75g
margarine)
Pinch salt
Cold water
